1 package fresh rice noodles
1 cup sliced beef, pork, chicken or shrimp
1-2 eggs
2-4 stalks Chinese brocolli or 2-3 cups cut brocolli
2-4 cloves garlic, peeled and chopped
thick sweet Chinese soy sauce
oyster sauce
sugar
fish sauce
sesame oil

Cut fresh rice noodle sheets width-wise and peel open.  Heat 1 tbsp vegetable
oil and 1 tbsp sesame oil in frying pan.  Stir in rice noodles and add 2-3
tbsps. soy sauce and cook until all the noodles are covered by the soy sauce.
Remove rice noodles onto a reserve plate.

As meat/shrimp is cooking, add brocolli and stir until starting to wilt.  Make
some room in pan and break in egg and add noodles, making sure to incorporate
everything.  Flavor with 2-3 tbsps fish sauce and 1-2 tbsp sugar.  Serve with
condiments - pickled sliced chili, fish sauce, sugar and ground white pepper.
Serves 2. Can be made without meat.
