nuclear african peanut sauce

Preheat the oven to 400 degrees.

1 clove garlic, minced
2 T onion, minced
~1/2 cup vegetable oil
~1/2 cup white vinegar
1 medium-sized sweet potato
1 1/2 decent-sized carrots
1/3 peanut butter (chunky)
1 T sugar
~2 cups of water
3 T crushed red pepper flakes
1 t turmeric
1 t paprika
3 T minced cilantro
1 t salt

Peel the sweet potato and carrots, and cut into medium-sized chunks. Bake for
approximately 1 hour in a baking dish covered with aluminum foil (to keep
everything moist).

While that's baking, saute the onion in 1 T of the oil in a pot on medium heat.
When the onion is translucent, add garlic and 1 T vinegar. Stir a lot, adding
bits of water as more evaporates, and another T of vinegar. The idea is to cook
the onion and garlic into something resembling a paste (about 1/2 hour).

Poke the sweet potato and carrot chunks with a fork to determine mooshiness
after about an hour. If they're good and mooshy, add them to the pot with the
garlic/onion/vinegar/oil combo, and mash them up until they're a paste. Add
peanut butter, oil, remaining vinegar, red chile flakes, turmeric, paprika, and
sugar. Stir a lot over medium heat. Get everything completely mixed together,
and add water as necessary to get the consistency somewhere between a paste and
a sauce.

After about 45 minutes of occasional stirring while simmering and adding water
to maintain consistency, add salt and cilantro. Continue to stir now and again.
You may wish to devote yourself solely to stirring for the last half-hour.
Total stirring/simmering time is 1 1/2 hours; this provides you an excellent
opportunity to do a bunch of other random household things, like clean the
mysterious sludge off the roof of the microwave.

At this point, you can try eating it just as it is as a sauce on pasta, rice,
etc. You can also imitate the Boyfriend and eat an entire box of Wheat Thins
while using the sauce as dip. I recommend putting it in the fridge overnight so
that all the flavors can combine properly. The net result is very hot and
somewhat sweet, with an explosive reaction that sneaks up on you. Happy eating!
