bagelsStir together 200 ml lukewarm water 1 packet dried yeast 1/2 t sugar Let sit 5 minutes, then add 1/2-1 t salt Put in a bowl 300 g flour Add yeast mixture and knead for 10-15 minutes, adding during the kneading process an additional 100 g flour Let the dough rise covered in a lightly-greased bowl for 40 minutes. Then knead and split into 8-10 balls. Form the balls into bagel shapes by pushing a thumb through the middle. Let rise 20 more minutes. Preheat oven (circulating) to 200 C. Boil 3 l water 1 t sugar Cook the bagels in the water for 5 minute apiece, 2 at a time, turning throughout. Pat the finished bagels dry and place on a prepared baking sheet. Paint with a mixture of 1 egg yolk ~1 T water and sprinkle with one of sesame seeds or poppy seeds or sunflower seeds or nothing Bake 35-40 minutes.
